Description

Ingredients

1 lb (450g) breakfast beef sausage free from added sugars and fillers
8 large eggs
1 cup (240ml) heavy cream
1 cup (100g) shredded cheddar cheese
1/2 cup (50g) diced bell peppers
1/2 cup (50g) diced onions
2 cups (200g) fresh spinach
Salt and pepper to taste
1 tsp garlic powder
1 tsp dried oregano


Instructions

1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
2. Cook sausage in a skillet over medium heat until fully browned; drain excess fat and set aside.
3. In the same skillet, sauté bell peppers and onions for 5 minutes until softened; add spinach and cook until wilted; remove from heat.
4. Whisk eggs, heavy cream, garlic powder, oregano, salt, and pepper until combined and frothy.
5. Spread cooked sausage evenly in the baking dish, layer sautéed vegetables over sausage, pour egg mixture on top, and sprinkle cheddar cheese.
6. Bake for 30 to 35 minutes until eggs are set and golden on top; test with a toothpick to ensure doneness.
