Ingredients
1 lb lean ground beef (or turkey for a lighter option)
1 tbsp olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, sliced
1 cup cherry tomatoes, halved
1 tsp cumin
1 tsp oregano
½ tsp smoked paprika
Salt and black pepper to taste
½ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
Juice of ½ lemon
Instructions
In a large skillet heat olive oil over medium heat Add the ground beef and cook until browned Drain any excess fat
Add the onion and garlic cooking until fragrant
Add the red bell pepper zucchini and cherry tomatoes Sauté until the vegetables are tender
