A flavorful slow cooker dish combining tender chicken thighs with seasoned rice infused with lemon and herbs.
Ingredients
4 boneless, skinless chicken thighs
1 cup long-grain rice
2 cups chicken broth
1 lemon, juiced and zested
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper, to taste
Fresh parsley, for garnish
Instructions
1. In the slow cooker, combine the rice, chicken broth, lemon juice, lemon zest, minced garlic, thyme, rosemary, salt, and pepper.
2. Arrange the chicken thighs on top of the rice mixture.
3. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and the rice is tender.
4. Fluff the rice with a fork, then serve the chicken over the rice. Garnish with fresh parsley before serving.
Notes
Use bone-in chicken thighs for extra flavor.
Substitute chicken broth with vegetable broth for a lighter taste.
Store leftovers in an airtight container and refrigerate for up to 3 days.
