½ head green cabbage, sliced thin
1 medium carrot, cut into thin strips
1 tablespoon sesame oil
3 garlic cloves, minced fine
1 tablespoon fresh ginger, grated
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon mushroom sauce (optional for extra flavor)
1 teaspoon cornstarch mixed with 2 tablespoons water
¼ teaspoon crushed red pepper flakes (if you like heat)
2 green onions, sliced on the diagonal
Cooked jasmine or brown rice for serving (optional)


Instructions

Heat a skillet or wok over medium-high heat until hot, then add the sesame oil. The oil should shimmer but not smoke.
Add the ground beef and break it apart with a spoon or spatula. Cook for 5-7 minutes until browned all over. Drain any excess fat to keep it healthy.
Add the minced garlic and grated ginger. Cook for about a minute until fragrant, being careful not to let them burn.
Add the sliced cabbage and carrot strips. Stir-fry for 4-5 minutes until the cabbage softens but retains some crunch for texture.
Pour in the soy sauce, rice vinegar, and mushroom sauce if using. Stir well so the flavors blend.
Add the cornstarch slurry and cook for 1-2 minutes, stirring constantly to thicken the sauce and coat everything nicely.
Remove from heat and sprinkle with green onions for color and freshness. Serve over rice if desired, or enjoy as a low-carb meal.
