Ingredients
4 boneless, skinless chicken breasts
1.5 lbs baby potatoes, halved
1/2 cup grated parmesan cheese
4 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil
1/4 cup chopped fresh parsley
Instructions
1. Place the chicken breasts and halved baby potatoes into the crockpot.
2. In a separate bowl, combine the parmesan cheese, minced garlic, dried oregano, dried basil, salt, black pepper, and olive oil.
3. Pour this mixture evenly over the chicken and potatoes.
4. Cover and cook on low heat for 6 hours, or on high heat for 3 hours.
5. Before serving, sprinkle the dish with the chopped fresh parsley.
Notes
Use sweet potatoes instead of baby potatoes for a slightly different flavor.
Can be prepared the night before and refrigerated to save time.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
For extra flavor, add a splash of lemon juice before serving.
Use fresh herbs if dried are not available for more vibrant taste.
