Description
This garlic parmesan crockpot chicken and potatoes dish combines tender chicken breasts with flavorful baby potatoes cooked in a savory garlic and parmesan sauce.
Ingredients
4 boneless, skinless chicken breasts
1.5 lbs baby potatoes, halved
1/2 cup grated parmesan cheese
4 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup olive oil
1/4 cup chopped fresh parsley
Instructions
1. Place the chicken breasts and halved baby potatoes into the crockpot.
2. In a separate bowl, combine the parmesan cheese, minced garlic, dried oregano, dried basil, salt, pepper, and olive oil.
3. Pour this mixture evenly over the chicken and potatoes.
4. Cover and cook on low for 6 hours or on high for 3 hours.
5. Before serving, sprinkle the dish with fresh chopped parsley.
Notes
Use red or Yukon gold potatoes as alternatives.
Fresh herbs can be substituted for dried with adjusted quantities.
Store leftovers in an airtight container and refrigerate for up to 3 days.
