Ingredients

– 1 1/2 to 2 pounds boneless chicken breast, uncooked
– 1 tablespoon chili powder
– 1 1/2 teaspoons cumin
– 1/2 teaspoon paprika
– 1/2 teaspoon onion powder
– 1 1/2 teaspoons salt
– 1/2 teaspoon garlic powder
– Chicken broth

Chipotle sauce:
– 1 cup sour cream
– 2 to 3 chipotles in adobo sauce

Additional toppings:
– Shredded cheese
– Lettuce
– Jalapenos
– Avocados
– Tomatoes
– Salsa
– Limes
– Small tortillas


Instructions

Place trimmed boneless chicken breasts in the bowl of a 5 to 6 quart slow cooker. Sprinkle the chili powder, cumin, paprika, onion powder, salt, and garlic powder evenly over the chicken breasts. Pour chicken broth over the chicken until it is fully covered. Cover the slow cooker with the lid and cook on high for 4 hours or on low for 8 hours.
While the chicken is cooking, prepare the chipotle sauce by blending the sour cream, chipotles, and a small amount of adobo sauce in a food processor until smooth. For a smoother texture, strain the sauce through a mesh sieve, discarding the solids. Transfer the sauce to a squeeze bottle or a clean bowl and refrigerate until ready to serve.
Once the chicken is cooked, shred it with two forks and return it to the slow cooker to soak up the remaining juices. To assemble the tacos, place shredded chicken on small tortillas and add your choice of shredded cheese, lettuce, jalapenos, avocados, tomatoes, and salsa. Finish each taco with a drizzle of the chipotle sour cream sauce and a squeeze of fresh lime juice. Serve immediately.
