Ingredients
From 1 pound ground beef
2 medium zucchinis, diced
1 large sweet potato, peeled and cubed
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and black pepper, to taste
2 tablespoons olive oil
Fresh parsley, chopped (for garnish)
Instructions
Heat the olive oil in a large skillet over medium heat.
Add the chopped onion and minced garlic, cooking for 2-3 minutes until fragrant and softened.
Add the ground beef, breaking it apart with a spoon as it cooks.
Brown the beef for 5-7 minutes until it is no longer pink.
Drain any excess grease if necessary.
Stir in the sweet potato cubes and season with smoked paprika, oregano, salt, and black pepper.
Cover the skillet and cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
Add the diced zucchini and cook uncovered for another 5 minutes, allowing the zucchini to soften while still retaining a slight crunch.
Remove from heat and garnish with fresh parsley.
Serve warm.
